Protein Seed Bar
The perfect snack for an on-the-go entrepreneur.
If you run a business, chances are there’s never enough time in the day for you to complete all the tasks on your to-do list-let alone eat healthy. One of my best tricks to not neglecting my nutrition is to have healthy snacks that are quick to make, ready to consume when I need something before running out the door. This protein seed bar from our friends ar Menu Mandala are quick to make, delicious and top you up on energy in a pinch. I also like to keep a banana and electrolytes packet in my work bag at all times just incase I am out longer than I thought. As convenient as it is, limiting fast food is also a big priority to me, I am all about the snacks.
YOU WILL NEED:
135 g Peanut Butter natural, Wow butter for peanut free
110 g Maple Syrup
25 g Sunflower Seeds
85 g Pumpkin Seeds
70 g Puffed Quinoa or baked
60 g Flax Seeds milled/ground
85 g Dried Cranberries
100 g Dates
5 g Vanilla Extract
6 g Cinnamon Stick, ground
0.8 g Salt
30 g Coconut Oil
METHOD
1. Measure out all ingredients into mixing bowl, stand mixer or kitchen aid 2. Using the paddle attachment or by hand, stir at low speed until all ingredients are combined, (2min) (4-6 min by hand)
3. Transfer into a baking sheet and press down to level mixture and compress into bar.
4. Cover and freeze for 1 hour, remove and cut into equal sized bars. 5. Store in freezer until needed.
Shelf life: 14 days
Prep 15. Freeze 1 hour.
